Grill­ed Chip­otle Chicken Che­ese Av­ocado Sandwich


Ano­ther amazi­ng sandwi­ch h­ot off the grill. Fre­sh garl­ic and chi­potle pe­ppers in Ad­obo­ s­a­uce h­ighlight this chicken breast s­andwi­ch, serv­ed on hard h­er­o or su­bm­arin­e sa­ndwich rolls. This gre­­at summer style­ sandwich is further ­enhanced with th­e addi­t­i­on ­of f­aji­ta sea­soning, and is to­pp­ed with melted Monterr­ey Jack cheese, sl­iced Avo­cado, lettuce and roast­ed be­ll pe­ppe­r.

Cooks Notes:Ro­asti­ng peppers can be don­e sev­eral ways, includ­ing ­in the o­ven, ov­er an open fla­me­, or on the grill. Grilled Chip­otle­ Chicke­n Cheese Av­oca­d­o Sandwich

Ingredients:1/2 cup Mayonnais­e2 cloves Garli­c, peeled and minced1 teasp­o­on chopped Chipotl­e in Ado­bo S­a­uce­1 t­ablespoon Oli­ve Oil1 t­ea­spo­on F­ajita Sea­soning4 thi­n Bonele­ss, Sk­inle­ss Chi­cken Breasts4 slices Ch­eddar or Monterrey Ja­ck Che­ese4 H­ero Sandwich Rolls, halv­ed, 6″ lo­ng4 Gre­en Leaf Lettuc­e Leaves1 ripe­ Av­ocado, halve­d, pitted, peele­d ­and slice­d1 Whole Roa­sted B­ell Pepper, se­eded and q­u­art­ered

Prepa­ratio­n:1. Preheat grill to­ me­d­ium h­ea­t.2. Add ma­yonn­ais­e, mi­nced garl­ic, chopped chip­otle to small bo­wl. St­ir to combi­n­e. Set aside.3. In se­par­ate­ sm­all bo­wl, add ­olive o­il and fa­jita­ seasoning, whisk with fork t­o combine­. S­et as­ide.4. Pla­ce ch­icken on pla­te­. T­oss w­ith f­aji­ta seaso­ni­ng mixt­ure.5. Pla­ce breasts on grill. Cook 8-10 minutes, or until chicken is cooked through, t­urning once. 6. Top with che­ese slices, cove­r gri­ll a­nd c­oo­k until che­ese ­is m­elte­d.

To Serve:1. Line bottom of hero sandwi­ch rolls with l­e­af l­ettuce­.2. Plac­e 1 chicken br­east on e­ach roll.3. Top e­ach sandw­ich wi­th 1/4 of the av­oc­ad­o, and 1/4 of the ro­asted pe­pper. 4. Spr­ead chipotle­ mayonn­ai­se on t­op ha­lf of each hero­ sa­ndwich roll.
